Tradition of kimchi-making in the Democratic People's Republic of Korea
Kimchi is a vegetable dish which is made by seasoning various vegetables or wild edible greens with spices, fruits, meat, fish or fermented seafood before undergoing lactic fermentation. In this course, tastes of the ingredients blend well producing a unique flavour. The tradition of Kimchi-making dates back to the 10th century and it has hundreds of variants. As rice typifies the staple food of the Koreans, so does Kimchi, the Korean’s side dish. It is served not only at every meal but also on special occasions such as weddings, holidays, birthday parties and memorial services for the deceased as well as state banquets. The daily consumption of Kimchi by Koreans is great in amount. Each Kimchi variant differs in ingredients and recipes according to seasons and localities. It has remarkable nutrition values as well. Koreans take it for granted that they help each other in Kimchi-making among neighbours, relatives or workplace colleagues. In this practice they boast their Kimchi, give advices on skills and congratulate each other on their successful Kimchi-making.

Oshi Palav, a traditional meal and its social and cultural contexts in Tajikistan
Oshi Palav (pilaf) is a kind of traditional meal of the Tajik people, which is prepared regularly at homes and in celebrations, rituals, gatherings. In dining rooms, national restaurants and tea-houses the Oshi Palav is everyday favourite meal of Tajik people. The Oshi Palav is prepared from carrot, rice, meat (beef, lamb, chicken), oil, onion and water in a big pot. For better flavor, cooks add some peas, saffron, garlic, caraway seeds, pepper and barberry. During the centuries Tajik people created different kinds of this meal, like "Oshi yak ba yak", "Palavi toki", "Oshi devzira", "Bedonapalav" and etc. up to 200 kinds of the element. In traditional Tajik culture there are many customs, rituals, celebrations and social gatherings dedicated specially to the element in which participate a big number of people, for example, the rituals "maslihat-oshi" (osh for advices), "sabzirezakunon" (cutting carrot rite), "oshi nahor" (morning osh), "oshi zanho" (osh for women), "oshi harifona" (osh of friends), "oshi gapkhuri" (osh with talking) and etc. The Oshi Palav in such gatherings and rituals brings people together and has the character of social integration and unity. People of Tajikistan recognize the Oshi Palav as a part of their traditional cultural heritage and call that as "King of meals". There are many stories, legends, folksongs, proverbs and other folklore texts regarding the element, which show the importance of the element among people. Also the element created many kinds of folk dance with plate, imitating the Oshi Palav cooking, which are played by folklore dance groups.

Traditional knowledge related to making of meat products (chuchuk, zhorgoom, byzhy, olobo, tash kordo)
One of the main meat delicacies is a horse meat sausage called ‘chuchuk’. It was made out of horse intestine stuffed with horse meat and fat. Sheep meat and internal organs were used to make such delicacies as ‘jorgoom’ (made out of sheep lungs and stomach), ‘byzhy’ (a sausage made out of sheep liver, fat and blood) and ‘olobo’, that is sheep lungs filled with milk and boiled in water. Tash kordo is an ancient Kyrgyz dish. Literally, it means “food prepared on hot stones”. The separated and marinated meat is wrapped into the game skin and prepared in a hole in the ground about 1.5 m long and 70 cm wide, with stones at the bottom and sides hanged over the hot ashes.

Naqqoshlik (ornament-making) art
Naqqoshlik is drawing an ornament - a pattern built on rhythmic alternation and a combination of geometric or graphic elements, performed by means of painting, drawing, sculpture or embroidery. Uzbek national patterns have their own names, going back in history. Traditional Uzbek ornament is found in decorative art embroideries, in wood carvings, in paintings on clay and ceramics, on Uzbek fabrics, on buildings. At the heart of the ornament is a picture of simple things. For example, knives are designed to protect, a flowering garden is a symbol of fertility and agriculture. Each flower carries information: a scarlet poppy - the image of an innocent girl, a tulip - a symbol of purity, a rose - peace and beauty, wildflowers - a young man. Often, a different meaning was embedded in the image of flowers. For example, they believed that they carried healing power and health. The ornament creates a vector image in which a magical meaning is laid, reflecting the course of human life. This is an oriental vector style with geometric patterns. Geometric patterns have abstract forms: - zigzag lines - circles - polyhedra - stars - ornamental motifs - meander - human figures - stylized inscriptions. Ethnic patterns are folklore images, folk motifs in which a creative union of religion and culture is concluded. They carry a semantic and ritual load.

Navruz
Navruz is an ancient and widespread holiday in Tajikistan, and it is celebrated on the vernal equinox, the beginning of the solar year and the new year according to the Iranian calendar, as well as calendars of several other nationalities. Navruz traditionally celebrates the awakening of nature and the beginning of agricultural work.

Tajikistan Naburz and children's highlight
Representative List of the Intangible Cultural Heritage of Humanity, 2016 Navruz is celebrated in Iranian cultures such as Tajikistan. As it is a happy festive day to welcome the spring after the long winter, the children enjoy various games. This video shows the children at play. Girls wear traditional Tajik costumes, and boys wear formal clothes while playing games like pebꠓble tossing and catching, kite flying, stick tossing, skipping rope, hacky sack, arm wrestling, swinging, breaking eggs. They also sing, allowing viewers to also feel cheerfulness of a festive day and become quite comfortable.\nLabchang, a musical instrument known from ancient times, received its name because it is placed between the lips and is played by a finger. Some old people in a few areas of Tajikistan continue to play labchang, so the art of playing has almost disappeared. The young generation generally doesn’t even now about the instrument. This film is dedicated to the methods of play on various types of labchangs in different parts of Tajikistan.\nVarious dance forms are performed in relation to nature throughout Tajikistan. The dances are varied, mainly having an imitating character. Performed by folk artists, the dances are transferred from generation to generation. Some of the rare dances are gone with their performers. The Pamiri people perform a rare mourning dance that is currently performed only in Bartang Valley and is on the verge of disappearances. Other dance forms are being revived day by day.

Traditional Leather Manufacturing
Kazakh masters have historically made different kinds of leather clothes and accessories as well as dishes, horse riggings, and other culturally relevant goods. The prevalence of leather goods indicates that leather production has long been a highly valued part of local traditional culture. The most significant part of nomadic economy was brought to fruition through leather manufacturing. Products related to equestrian lifestyles—girths, bridles, bibs, saddles, etc. Leatherwork consists of several stages. After processing the skins, they are boiled in a paint made from the rhizomes of trees, then dried. After that, the necessary parts are sewn, and an ornament is applied to the damp skin. After the ornament is ready, a vessel is filled with sand and dried, then the sand pours out and the product is dried again in the wind. The process ensures that the product will never change its original form.

Navruz in KyrgyzstanMarking the beginning of spring, Navruz (meaning March equinox) is one of the largest traditional holidays in Central Asia. Located in the heart of Central Asia, Kyrgyzstan has been celebrating Navruz (Nooruz in Kyrgyz) for a long time as its national holiday. When the Navruz holiday comes, Kyrgyz families gather to make holiday desserts: sumolok and boorsok.\n\nIn the old times, sumolok was a ritual dish prepared before the start of spring sowing. Sumolok is a sweet paste made from germinated wheat and stir cooked in a kazan, a large traditional pot in Central Asia. Sumolok has become an important cuisine in Kyrgyz culture since almost all of Kyrgyzstan celebrates the holiday by making it. In villages and towns, families gather around a kazan full of sumolok and take turns to stirring the sumolok. Usually it takes a whole day and night to finish the cuisine, which is why a typical Navruz scene in Kyrgyzstan is pictured as a group of families sitting around a Kazan while singing and stirring sumolok.\n\nBoorsok, on the other hand, is cooked faster than sumolok. Also a traditional sweet in Central Asia, boorsok is a type of fried dough in various shapes. Kyrgyz boorsok is typically shaped like a pressed doughnut.\n\nThis year, Boorsok National Record was held in the Arashan village near the capital city, Bishkek. The event was organized by Ethnographic Complex Kyrgyz Aiyli (meaning Kyrgyz village), successfully attracting an estimated 1,500 local residents and tourists. The main programs included making boorsok, singing songs, and competing in horse riding and other national games. The participants in the boorsok cooking competition used about a ton of flour and made more than 800 kg of boorsok. Kapingamarangi Taro Cerebration Day
Kapingamarangi is one of two Polynesian Islands with Nukuoro Atoll in Micronesia. March 15 is the Kapingamarangi Taro Cerebration Day, which commemorates communal efforts to expand taro patches on the island. This project, which began around 1944 during WWII, was very hard work during the hardship in wartime, only relying on manpower with simple tools such as shovels made from a drum. Their success was begun to be cerebrated from 1947. Two kinds of food, sea eels and giant swamp taro, are the main dishes in the communal feast. The eels were caught in traps and were roasted on fire fueled by firewood of hard mangrove wood for several hours.

Fermented bread of KOREA
The rice cake in the picture is one of the Korean street dishes made by making bread with alcohol. It is called bread, but unlike bread, which is mainly flour or corn flour, it mixes makgeolli and yeast in it. In the manufacturing process, almost all alcohol components disappear due to heat, but the aroma of alcohol remains. Recently, it has disappeared a lot, but only 10 years ago, it was a common food in street truck stalls. 사진의 떡은 술빵으로 한국의 길거리 음식중 하나이다. 명칭은 빵이지만 밀가루, 옥수수가루가 주재료인 빵과 달리 막걸리와 그 안에 들어있는 효모를 주재료로 더 많이 섞는다. 제조 과정에서 열에 의해 알코올 성분이 대부분 날아가지만 알코올 향이 조금은 남아있다. 요즘은 많이 사라졌지만 불과 10년전만해도 길거리 트럭 노점상에서 흔히 접할 수 있는 음식이었다.
