Gulazyk is an ancient meal of the Kyrgyz people. It is meat made into powder. Preparation of gulazyk: salted meat was boiled and then dried in a cool, well-ventilated and dark place. Then, the meat was grinded several times with millstones until it turned into a very fine powder.
Sometimes, the dried and grinded intestines of wild animals are added into gulazyk.

Social and cultural significance |
Gulazyk is considered to be unique to Kyrgyz people because almost no other groups in Central Asia have anything similar. Our ancestors had a nomadic lifestyle that affected Kyrgyz people’s customs, culture and traditions. Hence, food was supposed to fit such a lifestyle. Regular migrations, long hunting excursions required easy-to-make and yet nutritious food. When going for long journeys, people would take gulazyk with them in small pouches. When hungry, they would mix it with water and eat it as a broth. If there was no time for mixing it with water, a horseman could eat it as is. Gulazyk was light, which was convenient for long trips. Special leather pouches for gulazyk were tied to a saddle. Gulazyk also has medicinal qualities. |
